I am also looking to monitor/check boost on my 2015 Golf R. I have logged intake manifold pressure but the readings I am getting peak out at about 2.5 bar. I know my car is not boosting 37 psi. Do I have to subtract atmospheric pressure from that reading to figure my actual boost pressure?

    Yes.

The engineering problems are likely insurmountable. It would be like proposing to land a rocket booster section on a barge floating in the middle of the ocean.
