I have a 2006 Touareg 3.2 and cannot figure out how to perform the test for catalytic converter or oxygen sensor through vag-com.

Personally, I would try to address this first:
000104/ P0068 - MAP/MAF <-> Throttle Position Correlation.
Also, the Set Readiness procedure for your engine should guide you through Oxygen Sensor Aging tests.
