Is it possible to "code out" (remove) certain things?

I have some faults which I intend to get sorted, here is an example: I changed the MMI display for a wide Android-Auto enabled device. The car shows an error where the moving display motor is open circuit (obviously because it is unplugged). Is it at all possible to code-out things like these from the car so they don't show as faults?

Unlikely. As a general rule, you can only code out stuff that cars like yours were built without.

Honest advice: give up the idea of having a "clean" no-faults auto scan of your car. Any Audi built after 2000-ish will inevitably have a fault code somewhere, many times it's just a diagnostic aid for an intermittent condition, not an actual issue of concern. The newer the car, the more likely you'll have random non-issue faults sprinkled all over the place.

Been thinking about this. At point of build in the factory there will be a list of all the options fitted under each module in the car and they'll be all loaded up. This is software and software can be changed. There has to be a way of making the car forget it has something installed, or to ignore it...

This is software and software can be changed. There has to be a way of making the car forget it has something installed, or to ignore it...
The key comment you make is "software can be changed", for some modules VAG have several versions such as Basic, Mid and High which not only have different software but also hardware (e.g. missing hardware drivers, missing pins), so it really is not just a case of tweaking coding and/or adaptation.

Yeh, for example the Communication System my car is "High" and includes a handset in the centre console. But its completely useless because 3G has been turned off in the UK so any 3G SIM card installed can't be used. So the handset is just an expensive ornament.
... unless someone knows if there's some other way to use it...

Have you tried a 2G SIM? 2G won't be turned off until at least 2030.

Presuming it's the 2015 A8L in @horrgakx's signature, it will have shipped with the 3G Plus Touch version of the MMI. Exact model/software depends on market & other vehicle options, but it is still the 3G Plus Touch.

No it isn't, but you should have the little touch pad thing on your MMI console next to all the other buttons/knobs.
