My MK7 GTI's fuel level reading is way off. At "5 miles to empty" I can only put ~10 gallons of fuel in. The needle never seems to reach all the way to full and the range of 400 miles when newly filled turns out to be 270 miles before low fuel warning comes on. Is there a way to reset the fuel sender reading with Hex-Net?

Start by posting an Auto-Scan so we can take a look at the part numbers and software levels of the control modules. We've come across cases on other models where the instrument cluster software/firmware needed an update, though it's also possible the sender/sensor is just hanging physically. There is no reset as the sensor/sender gives out a resistance value which is then converted into the dial/display reading by the cluster. There is however a functionality which allows calibrating the reserve/empty warning as well as on some models a "full" calibration.
