2.0 TFSI CDLA Low Oil Pressure Warning

Hi

I'm having an issue with a 2.0T FSI in where the I will get a "STOP! Low oil pressure, Engine off!" warning on the dash and engine will turn off.
Car is a Mk5 Golf GTI with a recent engine swap.
The warning only happens when the engine is raced, under normal slow driving the is never comes up. Only seems to be when the engine oil is 90c> aswell.
Oil is at max, 70mm on vcds and only falls to 67mm with engine on. Logs show this stays consistent though rev range and when oil warning light appears.
VCDS scan shows no faults.
I have replaced the oil pickup, inspected the pump as much as I can with the sump off and replaced the pressure switch and still the problem persists.
I'm not looking at the pump as the problem atm as the engine has 22k on it and the condition of the pump seems to confirm this, also the pickup I removed was not blocked and only changed as I had a new one spare.

Are there any pressure relief valves in the system that would cause low oil pressure only at higher revs, or anything else that could cause these symptoms?

I managed to get a dealer oil pressure tester and checked the oil pressure on the car via the pressure switch hole on the side of the oil filter housing.
Here are my results, they look spot on to me but if someone could confirm this that would be great.

Cold start - 56psi
Cold idle (oil temp 30c) - 42psi
Hot idle (oil temp 78c) - 20psi
1500rmp - 48psi
2000rmp - 52psi
3000rmp - 58psi
Pressure does not pass 60psi depending on revs after that.

I can't drive the car and check the gauge at the same time as the hose on it is about half a meter long. Would the pressures change under the load of driving?

Could this simple be a wiring issue? I know because the oil filter housing is plastic, the switch uses a ground wire to the block, could a bad connecting of this ground cause the random oil pressure warning?

Absolutely it could. Is that switch normally open or normally closed? What happens if you unplug the harness from the switch?

The switch is usually closed, when the plug is unconnected the warning will show on the dash. (and in group 001, block 3 VCDS instruments)So when It sees <1.2bar it will open the circuit.
I have ruled out wiring as the issue as I made up a new ground wire and attached it to the starter earth point. Also tried another sensor from a 1.8t.
I though I had fixed it with the wiring, I drove a good 5 mile without the warning, then as soon I do any sustained acceleration it flashes up. Stop the car, start it again and its fine.

Next step will be to get a longer oil line for the tester, then I can check the pressure when the warning shows while driving. At this point tho it must be genuine low oil pressure with the warning, which is very worrying and puzzling.

Why would the pressure drop off (which must be altogether <1.2bar) at high rpms?
