Anyway... I did it the dumbest way possible. I run a Braille Lithium battery in my car. Have had exactly zero problems with it (granted it does get cold where I live) but it has limited standby power (not that one should make a habit of flashing anything without a tender connected, even without a Lithium battery). Anyway, connected the Lithium battery charger and started the flash. I was periodically checking for the first 2-3 hours. Battery voltage was at 12.9+, the Lithium charger gets the battery to 13.5ish then settles right around 13.
All looked good, aside from the math suggesting the flash would take, you guessed it, about 9 hours. I continue on with my day, eventually deciding to go get lunch. Down to the garage only to see the DRL's are off (and so is everything else in the car). Oh boy! Check the battery, it's at 8.x something. is unhappy, the charger is unhappy, I'm unhappy. I don't know what happened with the charger, it was not warm/hot to the touch so I don't think it overheated. My best guess is some logic says that after xx amount of time if correct voltage hasn't been achieved there is a problem, and it went to a failsafe mode. I turned it off then back on, it brought the battery up to 12.5 volts within minutes (as expected).
Figure what I'll turn the key ON... is blank as expected given the interrupted update, and the unexpectedly the infotainment screen is just showing a date of 01.01.1970
Soooo... disaster having motivated me beyond my laziness, I pull out the dash and connect it to my bench setup. OBVIOUSLY, this is where I should have tried to flash it in the first place, but remember, LAZINESS. Anyway, add 17 to the install list of the gateway that's on my bench. can't see it, can't see it, OBDEleven can't see it... cool cool cool. Back into , uncheck the box (on the option name I can't remember) that lets you flash at your own risk. It jumps to 10% pretty quick (as it did in the car) and then I sweat for several minutes waiting for 11%.
About 5 hours later it's at 90% and I'm feeling okay, I guess. Then it jumps to 100%, gives me the success message and is asking if I want to clear 's (as usual). The dash is alive, beeping like mad because there's nothing connected to it except a gateway and . But after all it's complaining I see the Welcome message with my Driving Profile name

Take it to the car, plug it in, car starts up... all is well that ends well... but man alive that was the dumbest way to do something that had a good chance of not working anyway!
As an aside, the "VIEW" button on my Mk8 wheel now works, haha.
