I've done it a few time ago, never spotted irregularities. But I don't think I haven’t kept the logs for this.As a baseline that looks OK. A next level would be logging the sensor data when it changes from cold to warm, to see if there are any jumps or irregularities in the values. Those irregularities can easily be spotted when loading the log into VCScope afterwards.
An unrelated topic, logging injector status codes (MVB 018+019) are always worth a look - especially when there are no fault codes stored. You may see a 064/128 in a log where it doesn't belong, which otherwise would be missed when looking at those values live while driving.
Done, I only see 0 for 5 injectors all the time except when releasing the throttle, value is 128.0 for the 5 injectors (while the car speed is enough to rotate the engine without gasoline)
